Baked Cauliflower with Peanut Sauce

 
 
This is a really great tasting dish, and very easy to make!  Serve with steamed rice and a fresh salad for a very satisfying meal.
 
Ingredients for Peanut Sauce:
 
3/4 cup peanut butter, smooth or chunky
1 tablespoon agave nectar
1 teaspoon apple cider vinegar
1/2 teaspoon tabasco sauce (optional)
1/2 cup water
 
 
Mix the peanut butter with the other ingredients in a small mixing bowl.  Add the water to make a smooth creamy paste.  Add tabasco for a slightly peppery flavor, optional.
 
Cut a fresh uncooked cauliflower into medium size flowerettes.  
 
Place the cauliflower in a greased baking dish.  Pour the peanut sauce over the cauliflower.  Add 1/2 cup water to the baking dish with the peanut sauce.  This will prevent burning.  The peanut sauce will thicken with baking.
 
Cover the baking dish tightly with a close fitting lid or aluminum foil.
 
Bake at 375 degrees for one hour or until the cauliflower is very tender.
 
Serve with steamed rice.
